Fresh Produce Without Cold Storage

The Real Cost of Cold Storage: Why We Never Use It

Cold storage solves a problem we don't want to have

Cold storage exists to solve one problem: it lets a shop hold produce for longer without it visibly spoiling. That sounds useful, and for large-scale distribution across long distances, it genuinely is necessary. But for a neighbourhood store buying daily from a mandi a few kilometres away, it solves a problem we've deliberately chosen not to have in the first place — the problem of needing to hold stock for days at a time.

What cold storage doesn't tell you

The tricky thing about refrigerated produce is that it can look fresh well past the point where it actually is. Cold slows down visible decay — wilting, browning, softening — but it doesn't reverse the clock on flavour or nutrition. A tomato that's been in cold storage for a week can look perfectly red and firm while tasting noticeably flatter than one picked and sold within a day or two. Cold storage protects appearance more than it protects quality.

Our alternative: buy less, buy daily

Instead of buying in bulk and storing cold, we buy smaller quantities every single morning, sized to what we expect to sell within about 48 hours. It's a less efficient way to run a shop on paper — more trips to the mandi, more day-to-day price variation, less predictability. But it means nothing on our shelf has been sitting in a freezer for a week pretending to be fresh.

The trade-off, honestly

This approach isn't free of downsides. Some days we run out of something popular before closing, because we didn't buy extra “just in case.” We'd rather sell out of good produce than have leftover produce quietly aging in a cold room. It's a bet that most customers would rather have genuinely fresh stock with occasional gaps than a fully stocked shelf of uncertain age — and so far, that bet has been the right one.

Nothing on our shelf has ever seen the inside of a cold room overnight — come see (and taste) the difference for yourself.
