Winter Leafy Greens

7 Leafy Greens Every Delhi Kitchen Should Stock This Winter

Winter is leafy green season in Delhi

If there's one upside to Delhi's cold, foggy winters, it's the leafy greens. Cooler weather slows down wilting and brings out sweetness in greens that turn bitter or bolt to seed in the heat. This is the season to actually cook with them, not just buy a bunch out of guilt and let it die in the fridge drawer.

The seven worth knowing

Palak (spinach) is the everyday workhorse — saag, soups, parathas, all of it. Sarson ka saag (mustard greens) is the classic winter staple, slow-cooked with makki di roti. Methi (fenugreek leaves) brings a distinct bitterness that mellows beautifully in parathas and aloo methi. Dhania (coriander) and pudina (mint) aren't traditionally “leafy greens” in the cooking sense but deserve a spot on this list purely for how much better they taste — and how much cheaper they get — in winter. Bathua is a winter-only green worth seeking out for raita or paratha. Chaulai (amaranth greens) rounds out the list, simple sauteed with garlic.

Keeping them fresh at home

Leafy greens are the fastest produce in your kitchen to go from fresh to sad, but a few habits buy you real time. Don't wash them until you're ready to cook — trapped moisture speeds up rotting. Wrap the bunch loosely in a dry cloth or paper towel before refrigerating; this pulls away excess moisture instead of trapping it in a plastic bag. Trim off any rubber bands or ties before storing, since they bruise the stems where they press.

Buy for the week, not the month

Leafy greens don't freeze well in their raw form and rarely last more than four to five days even with good storage. The better strategy is buying smaller bunches more often rather than one large haul — which, conveniently, is also how mandi pricing tends to reward you, since greens are cheapest and best right after a fresh harvest hits the market.

Our greens move within hours of arriving, not days — ask which bunch came in that morning and we'll point you to it.
